Soil :

Clay, limestone soils on south, southwestern slopes.


Vinification :

The juice is obtained either by pressing or bleeding the grapes.  After settling of the juice for 24 hours, the fermentation is started at a controlled temperature of 18°C. When only 90g/l of natural sugar remains, wine alcohol at 96% is added to stop the fermentation. This is what is called “mutage.


Tasting notes :

Attractive light yellow color with greenish reflection.  We discover an elegant nose of candied lemon, orange peel, jam of mandarin and dough of quince.  Its mouth is ample on notes of jelly of quince, liqueur of grapefruit and candied pineapple.  Very beautiful length and sweetness.  You can appreciate it with pineapple cake, the apricot Tatin pie
