Soil :

The soil is clay with a great deal of limestone, slightly slopping with south/south-western exposure.


Vinification :

The grapes are de-stemmed. During the fermentation, the must is pushed down 2-3 times a day. When there is but 90g/l of sugar left, wine alcohol (96%) is added to stop the fermentation. This is what is referred to as "Mutage sur marc" or fortification with marc. Maceration after the fortification lasts 10 days, and then the wine is aged in barrel for one year. If the wine spent more than 30 months in the barrique, we can call it Vin Doux Naturel “Tuilé”



Tasting Notes :

An elegant robe of a red dyes mahogany tree. A superb pleasant nose, to quince jam, goes back dried, and fruit paste. Its mouth is superb, with much volume on the red fruits with honey, jam of cherries and wall wild.
