Soil :

The soil is clay with a great deal of limestone, slightly slopping with south/south-western exposure.


Vinification :

The grapes are de-stemmed. During the fermentation, the must is pushed down 2-3 times a day. When there is about 75g/l of sugar left, wine alcohol (96%) is added to stop the fermentation. This is what is referred to as "Mutage sur marc" or fortification with marc. Maceration after the fortification lasts 10 days, and then the wine is aged in barrel for 4 months with an early bottling. 



Tasting notes :

An elegant robe of purple red. The nose is composed of black fruits, black berries and blackcurrant syrup.   Its mouth is superb, with a lot of volume on black fruit and wild blackberries with a hint of spices and cocoa.  You can appreciate this wine with a chocolate tart or mousse, a Black Forest gateau. You can also be pleased with cheeses like Roquefort and little cheese made from milk cow dry or semi- dry.
