Soil :

Clay, limestone soils on south, southwestern slopes.


Vinification :

The juice is obtained either by pressing or bleeding the grapes.  After settling of the juice for 24 hours, the fermentation is started at a controlled temperature of 18°C.  When only 90g/l of natural sugar remains, wine alcohol at 96% is added to stop the fermentation.  This is what is called “mutage”. If the wine spent more than 30 months in the barrique, we can call it Vin Doux Naturel “Ambré.



Tasting notes :

Attractive pink color with reflection of onion skin.  The nose is delicate, on aromas of figs sandbanks, orange peel, walnut and liqueur of hazelnut.  Its mouth is ample, powerful, on aromas of bergamot orange, liqueur of honey, plum or fig cakes on notes of grilled hazelnut.  You can appreciate it with the almond paste, the Basque cakes or the fruit baked in batter.
