Soil :

The soil is clay with a lot of limestone, sloping to the south, south-western.

Vinification :

This wine is made from vines around 40-60 years old with a low yield of 30 hl per hectare. The harvest is de-stemmed at 90 %. Fermentation from 24 to 28 days with pigeage (punching down of the cap) which allows for a more robust and aromatic wine. The beginning of fermenting is made at low temperature in order to keep all the aromatic potential of the grapes. The maturing is both in wooden and concrete vats of 45 hl or 53 hl for one year.

This wine ages well for 4-6 years, depending upon the year and the clients’ individual taste.

Tasting notes :

A red cherry at burlat sheen robe with violine highlights. The nose presents aromas of brandy cherries and wild plum jam. The mouth is unctuous, full and silky with a lot of butter, on strawberries and raspberries jam, associated with plum marmalade.

To savor with game, beef ribs, rack of lamb or young partridge with olives or a wild boar chop with chanterelles.
